Here are a few recipes of my latest brews. The labels were made using RenderBoy and ClarisWorks. If you brew any of my recipes, please email me and let me know what you thought of them and any suggestions or changes you made. I am always looking to improve my brews and I know these recipes could always be better. I am also always looking for good recipes, especially some good fruit beers. If you have a good one, I would love to try it.
Strawberry Wheat - I got the idea for this after trying, and loving, Pete's Wicked Strawberry Blond. I decided to make mine a wheat beer, however. It turned out very good, with a nice strawberry aftertaste. Even my wife, a non-beer drinker, likes it.
3 lbs. M&F Wheat DME
2 lbs. M&F Extra Light DME
1/2 lb. Crystal malt (30 L)
5 lbs. pureed strawberries
1 oz. Northern Brewer hops (7.7% alpha)
Wheast Bavarian Wheat yeast (#3056)Add crushed grains to 1.5 gallons cold water and heated to 200 degrees F. Remove grains and heated to boiling. Add extract. Return to boil and add hops. Boil 45 minutes. Added pureed strawberries and boiled another 15 minutes. Cool wort, add yeast starter and water to bring to 5 gallons. Beware, within 24 hours, there will be an incredible amount of foam. It went clear through my airlock. It continued for about 12 hours. I was forced to set up a blowoff tube, which did not help much, it still blew the lid off my fermenter 3 times.

Brown Ale - An easy recipe for a Brown Ale that turned out very good with little or no bite. I have had several compliments on this brew. If you are familiar with the Upstream Brewing Company in Omaha, this is very similar to their Downtown Brown Ale. It is great within 2 weeks. Sorry, no label for this one.
6.6 lbs. Munton's Amber liquid malt extract
1/2 lb. Crystal malt (60 L)
1/4 lb. Chocolate malt
1/4 lb. Black Patent malt
1 1/2 oz. Fuggles hops (4.2% alpha)
1/2 oz. Willamet hops (4.5% alpha)
2 tsp. Gypsum
1 package Edme Ale yeastAdd crushed grains to 2 gallons cold water and heated to 200 degrees F. Remove grains and heated to boiling. Add extract. Return to boil and add Gypsum and Fuggles hops. Boil 60 minutes, adding Willamet hops during last 10 minutes. Cool wort, add yeast starter and water to bring to 5 gallons.

Winter Wheat - A simple recipe for a good wheat beer. It turned out a bit darker than I intended (a little darker than in the label), and also had higher alcohol percentage than I was aiming for. However, it turned out to be an great brew after about 3 weeks in the bottle.
3.3 lbs. Munton's Wheat liquid malt extract
3 lbs. M&F Light DME
1/2 lb. Wheat malt
1/4 lb. Crystal malt (30 L)
2 oz. Tettnanger hops (4.4% alpha)
1/2 oz. Saaz hops
Wheast Bavarian Wheat yeast (#3056)Add crushed wheat and crystal malt to 2 gal. water and steep until water comes to a boil. Remove grains and add extracts and Tettnanger hops and boil 1 hour. Add Saaz hops during last 2 minutes of boil. Cool wort, add to fermenter with enough water to get to 5 gal. and pitch yeast starter. Rack to secondary after 3 days.

Holiday Cheer - This recipe was taken from "The New Complete Joy of Homebrewing" by Charlie Papazian. It is a great beer but takes a few months of aging before it is really good.6.6 lbs. John Bull Light liquid malt extract
1 lb. light clover honey
1/2 lb. crystal malt (30 L)
1/8 lb. black patent malt
2 oz. Cascade hops (6.1% alpha)
1 oz. Saaz hops (3.1% alpha)
1 oz. fresh grated ginger root
3 tsp. ground cinnamon
grated orange peels from 4 oranges
1 pkg Edme Ale yeastSteep crushed malts in 2.5 gal. of water until boiling. Add extract, honey and Cascade hops and boil 45 minutes. Add cinnamon, orange gratings, and ginger root and boil another 10 minutes, adding Saaz hops during last 2 min. Cool wort and strain into fermenter and add water to bring to 5 gallons and pitch yeast starter. Rack to secondary after 3-4 days.
